Pork Butt - Blowin' in the Wind

Got a really nice 8# pork butt on sale, so the girls thought sandwiches sounded really good for dinner tonight. Have a big cold front moving thru, so windy as all get-out. Put up a couple boards to block the wind, and temp seems to be fairly stable. I guess we will see how it does.

Cleaned and patted dry, rubbed my own blend of spices on it and threw it on the gas grill. Going to do it natural today, with no smoke, just the seasoning and try for a good crisp. Figure about 6 hours at 225-240, then wrap until dinner. May try the Sweet Baby Ray's sauce on it before wrapping.

I lather them in mustard so it gives the rub something to stick too. As long as you get your internal temp to 190-195 you should be good.

My wife always asks how long until it is done? Answer= It is done when it is done. No rushing it.

Yep, gas grill. It's a Char-Broil Pro model

I had full intentions of going all the way with the grill. Sauced it at 160, and continued on, but I hadn't checked the bottle and ran out of gas at 176. Pulled it, wrapped in paper, and finished for the next two hours in the oven at 225. Started at 0900 and finished at 1700, so full 8 hours. Came out fabulous with just a half bottle of SBR's!! Enough for 6 large sandwiches for dinner, plus 5 meals left over to freeze for the future.

Pretty darn good for a $17 pork butt!!
