When do you season your jerky?

Just curious as to how many of you add your dry ingredients to the marinate versus marinating and then sprinkling on the dry ingredients after the meat is taken from the marinate and dabbed off? I've always mixed it with the marinate but am starting to question that.

I season mine with Garlic Pepper before it goes in the Traeger. I put on the lowest setting, I let go for about 3hrs flip it once and check every hour until done.

I've always been of the marinate only crowd, but have found that I really like to pepper it, as it's drying and cooking in the oven.
+1. Pepper added while drying is a must.
Another great tip is to let your cut meat bleed out for 2-3 days. Drain the blood every day also. After it’s been drained a few days then add your marinade.

You all are weird as **** to add seasoning after. Dump the pepper in ahead of time rookies
