The first time I coated a brisket with mustard about 12 years ago, my wife looked at it and said, "That's going to be yucky with all that mustard." Of course, she later admitted that she couldn't even taste it. We've been using it to anchor rubs ever since.
 
I use it as a base coat when I deep fry stripers and bass with McCormicks Cajun coating also. I let it set in pure mustard overnight and shake it in a bag with the Cajun
