Brisket Breakfast Scramble

I wanted some leftover brisket this morning so I chopped some up, made hash browns and topped with BBQ sauce and poached eggs. It turned out 5 star.

I like to pick them from the meat section. Smaller, really round and thick makes great ones. Really large ones take too much space in the pan and cook too fast.
 
Haha, guess I flunked that test! I like the quality of meat at Fred Meyer in Idaho Falls. Albertsons second.
